Hello!! It’s been a while! I wanted to do a mini update on how it’s going eating plant-based. Or vegan if you will. I’m going into my fifth month now and so far so good. I have a few things that I’m still working on though, but, I don’t miss meat at all! I also wanted to share this super, tasty, and quick recipe with you for Mango Salsa.
I have been busy with work and even working a bit extra which makes me very tired and unproductive, sad but true. I’m hoping to get my life a bit more organized and myself more on track really quick, because, there is so much I want to get done. I’m happy to say that the workout slump I was in I’ve managed to pull myself out of! I now take whatever time I have for me, whether it’s fifteen minutes or an hour, and I work out! I’m so happy about that, because, I’ve managed to be consistent for a few weeks now. It doesn’t take much to throw me off track and then I feel so weak when I workout and it’s a bit of a struggle to find motivation when you feel so weak. But, it’s happening now again, so, I’m happy!!
Besides affecting my workout, my long hours affect my cooking. I find it really hard sometimes to get creative with cooking, plus I really don’t have that much time. So, recently I was reminded of this Mango Salsa I made years ago from a recipe my sister gave me. It was an accompaniment for chicken. But, even at that time I remember eating it with just rice and it was so good! So, my sis and I tried to remember how the recipe went and I made it last week. I have to share it with you because it makes anything taste so much better. Especially if you’re like me and like your savoury mixed with sweet 🙂
Right now we have the Ataulfo mangoes available to us here in British Columbia and they are delicious. Apparently they’re in season or available to us in late winter and early spring. I buy them at our local produce market. Here is a good video on how to pick a ripe mango as well as how to slice and dice it.
All in all I’m doing really well eating plant-based. But, I really enjoy having quick recipes like this to make fast, to add a bit of zest and flavour to a maybe not so interesting meal. Summer is going to be great with all the fresh herbs, vegetables, and fruit! I’ve already planted some herbs in pots and I have some tomato plants going. I still plan on getting some soil and planting a small garden in my backyard. I plan to on work on that tomorrow. I’ll let you know how that turns out.
I hope you give this super easy and quick recipe a try. Change it up with veggies you have in your fridge. I think it will make a great addition to your summer side dish repertoire whether you’re vegan or not! Let me know what you think about it too.
- 3 ripe mangoes, peeled and diced
- 1 small red onion finely diced
- 1 bunch cilantro chopped
- 1 red pepper diced
- 1 lime
- 1 teaspoon oregano
- extra virgin olive oil (1 - 2 tablespoons)
- salt and pepper
- Peel and dice the mango and add to a large bowl. Add the diced red pepper, diced red onion, chopped cilantro and oregano. Squeeze the lime juice into the mix. Stir. Add a splash of extra virgin olive oil just to mix and to taste. Season with salt and pepper.
- Serve along side rice, quinoa, or roasted vegetables. Excellent served with chicken or fish. Tastes great on it's own too!
