I’m sitting here wondering where the month of January has gone. I have my first cold of the year and the first cold in a long, long time. It’s not even that bad, just this nagging cough that starts up at the most inopportune times, like when I’m trying to sleep! As the new year is in full swing I was thinking this may be the only year that I have stayed on track for resolutions. I say ‘resolution’ only because it fits in with the new year, but, it’s really been a lifestyle change, eating a plant-based diet. I’ve been talking about it for quite a while now and I’ve basically been living it for the past few years, but, as of the end of December I have made a conscious decision to only eat plant-based diet.
As you may know, because of allergies, I cook most of my family meals without dairy, using alternatives as needed, and because of this eliminating meat is not a huge step for me. When I was cooking for just my husband and I, I would include dairy and meat for his sake. My main weakness happens to be eggs. I love eggs Benedict. Meat of any kind however is not a big deal for me to eliminate. I’ve never been a real beef or chicken lover. I can honestly say I don’t miss any of it right now. Mind you it’s only been just over a month for me. One thing I haven’t been able to eliminate yet is coffee cream. I’ve tried all the alternatives such as coconut coffee creamer and almond milk coffee creamer without any luck. They are all too sweet for my taste. So, until I find something, or start drinking my coffee black, or eliminate coffee all together I’ll be using cream. My husband is happy to eat more plant-based, but, he still craves his meat too and that’s fine, because, he’s never been a huge red meat-eater. He’s always had a very healthy diet all along.What is exciting is that I have been making some really delicious meals that everyone loves. I’ve made some of my old standby’s and found some new ones. I even bought a cook book, which I haven’t done in years. I never felt the need for one with everything being online. But, I went ahead and bought the oh she glows cookbook and I love it. There is also the ohsheglows website. The reason I bought this particular one is that it was for sale at Costco while I was there shopping which was convenient. I’m going to buy a few others that have good reviews and a few my daughter wants. One of the other reasons I bought the cookbook is… I was very lucky to get a new laptop for Christmas and I don’t want to have it in the kitchen with me when I’m splashing around cooking! It’s far too new and precious for any accidents to happen 🙂
I try to cook more when I have my days off in the hopes there will be leftovers for everyone to take to work or school as needed, but, I have to say that a lot of what I’ve been making is getting eaten up fast! I just made these veggie burgers from the oh she glows cookbook. Very tasty. I’m not sure if they are my favourite. So far this month I’ve tried out three veggie burger recipes and I think the one I made prior to this one, with black beans and rice, may be my favourite. I saved that recipe on my Pinterest board which you can find here and they are called the easy grillable veggie burgers. The ones I just made call for either grated carrots or yams and I made them with carrots. I’ll make them again with yams and see if there is a difference. They are so healthy for you and really crush the burger craving!
My husband still craves chicken, beef and fish once in a while and that’s okay. He’s happy to eat what I make and he does want to cut down on his intake of animal products. He’s super healthy eater to begin with as I said. My daughter and her boyfriend embraced the plant-based diet before I did and now one of my sons is doing the same. The concern my husband and son have is getting enough protein because they work out so hard. But, everything I read makes me believe that if you eat a well-rounded plant-based diet you will get all the nutrients your body needs. I sent my son some articles to read that were written by vegan athletes and the articles basically debunked the myth that you need to eat meat to get enough protein. I’m enjoying cooking and I don’t feel yucked out when I mash my burger patties together, because, I don’t have deal with tendon’s and blood vessels in the meat! Beans are so much nicer:)
I have to say I don’t miss meat. Talk to me about cheese in all it’s forms and a few eggs here and there… that’s another story. Look at this delectable burger! It made me very happy!
